kimchi cured my lactose intolerance
or was consuming it keeping me lactose tolerant all those years?
there's been a span for about 10 years in which i was effectively lactose intolerant. i loaded up on lactase pills and rolled the dice each time i went for icecream. one day after noticing the gallon jug of whole milk in my parents' fridge i realized i was the only one in my family that would have problems without pills after icecream.
long story short--it was. i also noticed after going on a course of pantoprazole, i got better still.
i grew up eating kimchi almost daily until my teens. then i would only have it once a quarter or so.
my mom and dad have it daily, yvonne gets it at least once a week, and my baby sister is married to korean man.
i get the stuff from costco. its cheap and just the right portion size for a single person. kimchi doesn't ever go bad, but it will get more and more fermented and sour. after it hits a certain sourness threshold, most people use it to make a stew.
it also just fits inside a gallon ziploc bag. this stuff needs to be quarantined from the rest of your fridge. most koreans have a dedicated kimchi fridge.
